  These Crispy Smashed Potatoes are the perfect snack, appetizer or side dish. Ultra crispy on the outside and fluffy on the inside! Ingredients -Small potatoes or new potatoes -Olive oil -Salt and pepper -Fresh herbs (rosemary or thyme) Instructions 1. Place the washed potatoes in a large pot and cover with cold salted water. Boil until tender, drain and let them cool. 2. Preheat oven at 220°C/425°F. Mix all the ingredients in a bowl. The potatoes should be fully coated in the oil. Place them on a baking sheet and smash them using the bottom of a glass. 3. Bake for 10-15 minutes on each side, flipping them until crispy and golden brown.

  STEP BY STEP GUIDE on HOW TO GROW AN ENDLESS SUPPLY OF BASIL Basil is one of the easiest herbs to propogate and multiply! All you need are some cuttings from your favorite basil plant and a glass of water 1. Take cuttings of basil stems that are not flowering or diseased. Cut a 4 to 6 inch long stem,    leaving small baby leaves intact on the mother plant to continue growing. 2. Strip off the leaves from the bottom 2 inches of the stem. 3. Place it in a glass of water making sure that no leaves are submerged under water. 4. Change the water every 2 days. 5. Roots should start developing in 7 to 10 days. Once roots are about an inch or two long transplant into a well draining pot or container that’s filled with rich, fluffy, organic soil. You can also transplant into the garden too if the weather is suitable. You can multiply basil whenever you want but especially do it in late summer before your basil plant succumbs to frost in fall. Small batch TOMATO GARLIC + SHALLOT CONFIT My new all time favorite thing, ever. Good on seriously everything, but honestly I just ate most of it straight out of the jar with some crusty bread. Ingredients: •1/2 cup cherry tomatoes •1/2 cup garlic cloves, peeled •1 shallot, sliced thinly •2 sprigs fresh rosemary •2 sprigs fresh thyme •1/4 tsp coarse sea salt •1/4 fresh cracked pepper •1 to 1 1/2 cups avocado oil Method: Preheat oven to 250F. Put the tomatoes, garlic, and shallots in a small baking dish (I used a half quart mini Dutch oven). Sprinkle with salt and pepper and then pour avocado oil on top until everything is covered. Place the rosemary and thyme on top and then bake in oven for 1.5-2 hours or until everything is tender. Store in a mason jar IN THE FRIDGE (very important) for no longer than 3 weeks. CRISPY AIR FRYER TOFU NUGGETS Can we take a moment and thank whoever invented the air fryer because wow we are so lucky 😫 these tofu nuggets are probably my favourite things to make in my air fryer (other than fries, of course) and they’re super simple and flavourful! This is a recipe I always like to recommend to friends and also clients who want to try tofu but don’t know how they can prepare it. It’s a crowd pleaser, I hope you try it out! INGREDIENTS • 1 block of extra firm tofu • 1 – 1 ½ cups vegetarian chicken broth (or vegetable broth) • ¾ cup whole wheat Panko breadcrumbs • 1 tbsp nutritional yeast • ¼ tsp salt • ½ tsp thyme • ½ tsp basil • ⅓ tsp oregano • 1 tsp celery salt • 1 tsp black pepper • 1 tsp dried mustard • 1 tsp paprika • 1 tbsp garlic powder • 1 tsp ground ginger • ¼ cup all-purpose flour • Cooking spray DIRECTIONS 1. Cheesesteak Spaghetti Squash Recipe

  1. Start out by dicing 3 bell peppers and 2 yellow onions. 2. Add them to a pan on medium heat with oil. 3. While these are cooking, cut a spaghetti squash in half, remove the seeds, and coat both sides with olive   oil. Then season, (I used Adobo, onion powder, smoked paprika and salt and pepper) 4. Then flip them over, poke holes in the skin with a fork, and bake face down at 400 degrees for about 25   minutes. 5. Once your peppers and onions are caramelized, season with the same seasonings that you used on the   spaghetti squash. 6. Then take out your squash, use a fork shred out the spaghetti, and then mix in all of your peppers and   onions. 7. Then top both halves with cheese (I used Muenster but you can use Provolone, Swiss or pretty much any   cheese) Then melt the cheese under the broiler and top off each side with steak. I used sliced top sirloin, but you can also use shaved steak. Enjoy

Brown Butter Chocolate Chip Cookies Recipe

In a pan on medium low, add 2.5 sticks of salted butter. Stirring frequently, let the butter simmer until you see it turn brown. Then take it off immediately so it doesn’t burn, and transfer to a bowl to cool. For your dry ingredients, in a bowl combine: -2 cups of flour -1 tablespoon cornstarch -1 teaspoon baking soda Then in a mixing bowl add: -1 cup of brown sugar (light or dark both work) -1 cup of white sugar -your brown butter (make sure it’s cooled down) Mix, then slowly add: -1 egg -2 egg yolks -2 tablespoons of vanilla extract -the dry ingredients (add in a little at a time) Mix until its a nice & smooth dough then add in 3 cups of chocolate chips. Any chocolate chips will work, but my favorite combo is: -1 (chopped) dark chocolate Lindt bar -1 (chopped) milk chocolate Lindt bar -1 cup of Ghirardelli grand chips Fold in the chocolate, and roll 4 tablespoons worth of dough into balls, and let them sit in the fridge for at least 2 hours.  Straight from the fridge, bake a...

In a pan on medium heat, add: -1/4 cup of olive oil -1 small diced onion -1 tablespoon of freshly minced garlic -4 tablespoons of tomato paste Let this simmer for about 5 minutes and then add: -1/2 cup of dry white wine (I use Pinot Grigio or Chardonnay) -4 heirloom tomatoes (diced with the seeds removed) Let this simmer for about 10 minutes or until the tomatoes reduce and then add: -1 teaspoon of sugar -salt and pepper -chili pepper flakes (if you don’t mind some spice) -1 pound of al dente cooked pasta (add less pasta if you want it to be saucier.) -fresh chopped basil -fresh chopped oregano -Parmesan cheese Enjoy
