Heirloom Tomato Pasta Recipe
In a pan on medium heat, add:
-1/4 cup of olive oil
-1 small diced onion
-1 tablespoon of freshly minced garlic
-4 tablespoons of tomato paste
Let this simmer for about 5 minutes and then add:
-1/2 cup of dry white wine (I use Pinot Grigio or Chardonnay)
-4 heirloom tomatoes (diced with the seeds removed)
Let this simmer for about 10 minutes or until the tomatoes reduce and then add:
-1 teaspoon of sugar
-salt and pepper
-chili pepper flakes (if you don’t mind some spice)
-1 pound of al dente cooked pasta (add less pasta if you want it to be saucier.)
-fresh chopped basil
-fresh chopped oregano
-Parmesan cheese
