Avocado Egg Rolls Recipe
This recipe makes approximately 10 egg rolls
Get 5 avocados and cut them into cubes.
Add them to a bowl with:
- the juice from 1/2 of a lime
- sun-dried tomatoes (removed from the oil and finely chopped, I use about half of a 7 ounce jar)
- 1/2 cup worth of finely diced red onion
- 1/2 cup of chopped cilantro
- salt and pepper to taste
Mix it all together then get egg roll wraps, add in your filling, and roll them up as directed on the back of the package.
Then fry them on medium heat until golden brown letting them rest on a paper towel or cooling rack.
When serving, cut them diagonally in half.
I like to dip them in Cilantro Ranch
